'Araceli' 2022 Skin Contact Pinot Grigio Ramato
Bold, wild strawberries and white pepper.
One of our most interesting and divisive wines - something between an orange wine and a red-leaning rosé. It's bold and evolving with notes of white pepper, cherry, vanilla, clove, and wild strawberry, wrapped in soft but present tannins. We advise drinking slightly-chilled and see how she changes as she warms up.
How was it made
Hand-harvested and transported to our London winery in 2°C refrigerated trucks, this Pinot Grigio is not the neutral Italian white most people expect. First off she’s made with German grapes. Pinot Grigio, Pinot Gris, and Grauburgunder are all the same grape—named for its grey-pink-gold skins and pine-cone-shaped bunches—but the typical Pinot Grigio style is made from clear, pressed juice fermented in stainless steel for a clean, simple profile.
Our “Araceli” takes a completely different path. We ferment the grapes on their skins for a full week, producing a copper-toned “ramato” style wine with the texture of a light red. Wild yeasts drive the fermentation, and we add no finings, additives, or filtration, so the wine may appear slightly hazy. A short rest in new French oak adds complexity.
