'Calvin' 2024 Almost White Pinot Noir

Red berries, sherbet, crisp acidity.

The wine has a very very very light pink hue and on the nose there is orchard fruits of red apple, and pear with a subtle floral lift. On the palate a bright, crisp acidity that brings vibrancy with texture and a long mineral finish.

How it was made

We wanted to make this wine into a white wine but we failed. A teeny tiny but of the colour from the skins has remained. The grapes were whole bunch pressed and fermented in stainless steel. This separated the clear juice from the dark skins of the Pinot Noir grapes. The wine underwent malolactic fermentation after alcoholic fermentation was complete, converting the sharper malic acid to a smoother, creamier lactic acid. Aged in stainless steel, the wine was bottled in summer 2025.
