Tropical fruits, hoppy and hazy. 

A uniquely cool marriage of very premium hopped beer and English fizz in one bottle - softly punchy and refreshing like a hoppy IPA with a lovely wine acidity. Slightly hazy which contributes to the palate weight and finish, alongside aromas of coconut, citrus and tropical fruits. 

How it was made

Hand harvested and whole bunch pressed, with primary fermentation in stainless steel tanks. The base wine was dry hopped with hop flowers (Sabro, Citra, Mosaic) in large tea bags for 1 week before being removed. The wine then tank aged for months before additional yeast and sugar was added before undergoing secondary fermentation in bottle.

After another year it was gently turned on its head so that the sediment from the secondary fermentation would form in the neck before being disgorged (the sediment frozen and popped out) and topped up with the same wine. No sugar or nasties were added - this wine is bone dry.

Pinot Noir grapes grown in Herefordshire; with Sabro, Citra and Mosaic hops. 

Meet the dog

Casper at the time was a 3 month old labrador puppy who’s eyes we couldn’t resist not having on our bottle.
