'Lynne' 2021 Cabernet Sauvignon

Blackberry, peppery and smooth. 

A medium-to-full-bodied red, aged for 24 months in barrel, this wine offers beautifully integrated, silky tannins and a core of rich blackcurrant and blackberry. Layers of toasted nut and subtle pepper add warmth and depth. Generous yet refined, it’s a fantastic partner for food—but just as delightful to savour entirely on its own.

How was it made

This wine was crafted in two separate fermentations, each made from destemmed grapes placed into stainless steel tanks. A portion of juice was drawn off using the saignée technique, concentrating flavour and intensity. One batch fermented with wild yeasts, the other with a selected strain - an intentional contrast that builds layered complexity. Fermentation ran warm, between 28–30°C, and the wine stayed on its skins longer than usual to enhance depth and richness. After pressing, the wine matured in a mix of new and seasoned French oak barrels for up to 24 months before being lightly filtered and bottled.

Meet Lynne

Lynne was 72 when we made the wine and she is a retired woman who describes herself as a diva from the Royal town of Sutton Coldfield.
