'Roger' 2023 Rondo Col Fondo
Bold, blackcurrants and sloe berries.
An unusual, super deep and tantalising red sparkling wine made from Hampshire grapes. Expect dark purple fizziness.
How it was made
Roger is made in what many call the Col Fondo method (meaning 'with the bottom'). The secondary fermentation happens in the bottle in the same fashion as Champagne, but rather than disgorging and removing the sediment you let it sit at the bottom. This increases depth, ageing potential and protects the wine so no suphur additions are needed.
These grapes were destemmed by hand over wire and fermented with skins in the tank, just like any red wine would. We pressed the wine off the skins slightly earlier than usual to not extract too much of the tannins and fullness and then refermented the wine in the bottle without disgorging.

Meet Roger
Roger is now retired, he was 89 when we picked the grapes, he's now 90! He is an architect and has had a fascinating career taking him across the globe, now living in Cheltenham.
